They’re also allergy-friendly with no gluten, no dairy, and no egg which means they’re suitable for vegans as well as those following gluten-free or paleo diets. 

What's The Secret To Making 2-Ingredient Banana Pancakes?

Combining mashed banana with chia seeds is where the magic happens! We grind the chia seeds so they act as a binding powder that's rich in fibre and a host of other health benefits. Chia seeds are an awesome source of plant-based protein, essential fatty acids, and antioxidants, plus they're considered a beneficial food for babies so these recipes can be enjoyed by toddlers too.

Banana Pancake Ingredients

  • 1 large mashed banana
  • 2 tablespoons of chia seeds

Optional extras: oats, granola, fresh or frozen berries, grated apple, cinnamon, vanilla powder, lucuma powder, mesquite powder, protein powder

You can be as creative as you like in experimenting with different combinations of superfoods in your banana pancakes. A safe option is to add 1/2 teaspoon of cinnamon and 1/2 teaspoon of vanilla powder, or you could try adding 1 tablespoon of lucuma and/or 1 tablespoon of mesquite for a salted caramel-like flavour. 

How To Make Banana Pancakes

Use this method to make our easy banana pancakes for one person:

  • Mash 1 large banana in a mixing bowl with a fork
  • Add 2 tablespoons of ground chia seeds (use a coffee grinder or you can buy pre-ground chia seeds)
  • Add any optional extras - this can be nuts, seeds, superfood powders, dried fruit, protein powders or sweeteners
  • Heat frying pan or skillet on a low heat
  • Add 1 teaspoon of coconut oil to the pan
  • When oil has melted, add 1/4 scoop of batter to the hot pan
  • Flip each pancake with a fish slice after approximately 3 minutes, ensuring not to burn the pancakes
  • Cook until golden on each side
  • Serve immediately and drizzle with coconut yoghurt and sprinkle on other toppings, such as berries, cacao nibs, and coconut flakes,

Each recipe serves one person. To make these banana pancakes for two, just double the recipe.

Tips for Cooking Banana Pancakes

  • Keep your pancakes small - 1/4 cup of batter will do the trick! Not only will they cook more quickly, but they're easier to flip
  • Be careful not to overheat your pan, cook your pancakes on a low heat to avoid burning
  • When it comes to flipping, let the pancakes cook on the first side until the underside is fairly golden-brown (lift a corner and peek)

If you want to make banana pancakes with no flour but want to include some added fibre, adding oats (or even granola) is an easy way to up the fibre content of your breakfast and help sustain your energy levels. Just add a couple of tablespoons of oats to your banana pancake mixture.

Banana pancakes with almond flour or coconut flour
